Garbanzo is Spanish for what you probably know as chick peas.
I love using fresh fruit in salads, especially oranges. It’s the burst of flavor when you bite into a piece of orange – it sparkles in your mouth. The wine vinegar used in this salad also brings some pizazz.

Toss together:
- 2 cups raw Broccoli – diced
- About 2 T Red Wine Vinegar
- 1 1/2 cups raw Zucchini, sliced n diced (if you are using organic leave the peel on)
- 1 med Orange, peeled and broken into sections, then each section cut in half
- About 2 T Extra Virgin Olive Oil
- 4 cups Mixed Baby Greens
- 2 sweet bell peppers, diced
- 30 red or green seedless grapes (you don’t have to use seedless, but it’s more pleasant not to have spit them out while eating a salad!)
- 1 1/4 cups garbanzos (Chick Peas)
