When do you eat your overnight oats? I think most people prep them at night, and eat them for breakfast. I figure they’re called overnight oats because they’re s’posed to be eaten at night so we digest them overnight! Ha! They’re the perfect bedtime feast (maybe that’s why I struggle to lose weight?)
I’ve been playing with recipes, and find there are a couple secrets to yummy overnight oats. One is whisking together Greek Yoghurt and your favorite milk, another is a dollop of honey, and finally, 1/4-1/2 teaspoon vanilla extract.
Tonight’s oats, whisk together in a medium size bowl:
- 1/2 cup Greek yoghurt
- 1/2 cup your favourite milk
- 1/4 cup skim milk powder
- 1/4 cup water
- 1/2 tsp Vanilla
- 1Tblsp honey
Then add:
- 1/2 cup large flake rolled oats
- 1 Tbsp chia seeds
- 1 Tbsp pumpkin seeds
- 1 Tbsp psyllium husk
- 1 Tbsp broken walnuts
- 1 Tbsp golden flaxseed
- 1 cup blueberries (frozen are fine)
Mix all together, cover and place in fridge for a few hours. Yes, the longer you leave it the softer the oats get.
