Minty Vegan Sandwich Spread

hemp seeds

  • about 1/2 cup cooked wheat grains
  • about 1/4 cup mashed tofu
  • 2 dessert spoonfuls shelled hemp
  • 1 dessert spoonful golden linseed
  • 2 brazil nuts, finely chopped
  • 1 large desert spoon finely diced onion
  • 1 clove garlic, crushed
  • about 2 dessert spoonfuls finely chopped fresh mint

  • about 1 dessert spoonful fresh sage
  • about 1 teaspoon tomato paste
  • about 1 teaspoon Dijon mustard
  • a sprinkle of fine herbs
  • 1 small tomato, finely diced
  • freshly ground salt and pepper
  • a drizzle of olive oil

Mash all together with a fork to blend, but not to break the wheat grains. Spread on your favorite bread or crackers.  Makes enough spread for four regular size rice cakes.
